Start Your New Year With A Delicious Brunch

With so many things changing this year, you might be planning to celebrate New Year’s Eve at home. That doesn’t mean it can’t be a special time, though. Party in your living room all night and have a delicious New Year’s Day brunch to kick-off 2021.

Chicken and Biscuit Sliders

These sliders are sure to please the whole family and fill them up for the day ahead.

1 Can Refrigerated Biscuits

1 Cup All-Purpose Flour

½ Cup of Panko Breadcrumbs

1 Tablespoon of Paprika

1 Tablespoon of Onion Powder

1 Tablespoon of Garlic Powder

Pepper

Salt

1 Pound of Chicken Breasts (Boneless Skinless), Cut into 1-inch Pieces

¼ Cup of Softened Butter, Plus 2 Tablespoons Melted Butter

1 Tablespoon of Honey

Pickles to Garnish

Preheat your oven to 350 degrees. Cut the biscuits in half and bake according to the package. Remove from oven. Raise the temperature to 400 degrees. Combine flour, bread crumbs, and spices in a large zip-top bag. Season with salt and pepper, and add the chicken. Seal the bag and shake well to fully coat the chicken. Spread the chicken out on a sheet pan and toss with melted butter. Bake chicken and flip halfway until cooked through. This should take about 20 minutes. In a small bowl, mix softened butter and honey. Spread biscuits with butter mixture, add chicken, and top it all with a pickle. Enjoy!

An Easy Frittata

This is a great one-pan option and you can pick your favorite mix-ins. Here is a quick recipe to start with, though!

8 Large Eggs

1/3 Cup of Heavy Cream

¾ Cup of Shredded Mozzarella Cheese

Red Pepper Flakes

Salt

Pepper

2 Tablespoons of Extra-Virgin Olive Oil

1 Minced Shallot

3 Cloves of Minced Garlic

8 Ounces of Sliced Baby Bella Mushrooms

½ Cup of Ricotta

3 Cups of Baby Spinach

Preheat your oven to 375 degrees. In a medium bowl, whisk eggs, heavy cream, and mozzarella. Add salt, pepper, and a pinch of red pepper flakes. Heat a large oven-safe skillet over medium heat. Add olive oil, shallot, and garlic, and cook for about 5 minutes. Add mushrooms and cook for another 5 minutes. Add spinach and cook for another 2 minutes. Season with salt and pepper. Add egg mixture to the skillet and add dollops of ricotta. Put the skillet into the oven and bake for about 12 minutes. Slice up and serve!
